Smoked Salmon Cucumber Sandwiches


I think this is my favorite version of a cucumber sandwich: the “salmwich” 😉 .. haha! Now if you look at my version, you can see that some cucumber slices are halved. That’s because the cucumber I bought at the farmers market was gigantic, I had a hard time believing it was organic. So, to make them bite-size I cut them in half (the larger slices, anyway) and it kind of worked out… I didn’t really get the aesthetic it the picture I wanted, but it all tastes the same — delicious!

This is the appetizer I like to bring to a party, because it’s light and it’s usually new to some people. It’s also affordable and simple to whip up before heading out. The only thing I haven’t figured out yet is an easy way to transport these guys, so give me ideas! I’ve had some slide around and had to fix them up before plating them.


Smoked Salmon Cucumber Sandwiches

I love the idea of cucumber sandwiches. You can really put a spin on a great appetizer dish by adding the smoked salmon, freshen it up with some dill and make it savory with the cream cheese. Keep them chilled, and impress your friends & family!

  • 8oz softened cream cheese
  • 4oz smoked salmon
  • 1 large cucumber, sliced
  • 2 tbsp fresh dill, chopped
  1. Combine salmon, cream cheese, and dill in a medium-sized mixing bowl.
  2. Slice cucumbers thinly and pat dry with a paper towel.
  3. Apply 1/2 to 1 tsp of mix to a cucumber slice, and top with a second slice.
  4. Lay out "sandwiches" on a piece of parchment paper, or paper towel on a baking sheet and chill in the fridge before serving.
