I love the idea of cucumber sandwiches. You can really put a spin on a great appetizer dish by adding the smoked salmon, freshen it up with some dill and make it savory with the cream cheese. Keep them chilled, and impress your friends & family!
8oz softened cream cheese
4oz smoked salmon
1 large cucumber, sliced
2 tbsp fresh dill, chopped
Combine salmon, cream cheese, and dill in a medium-sized mixing bowl.
Slice cucumbers thinly and pat dry with a paper towel.
Apply 1/2 to 1 tsp of mix to a cucumber slice, and top with a second slice.
Lay out "sandwiches" on a piece of parchment paper, or paper towel on a baking sheet and chill in the fridge before serving.
