Chorizo Gouda Taco Salad

  1. Heat a large frying pan on medium heat
  2. Slice Bacon to 1-inch sections or smaller
  3. In a medium-sized mixing bowl add Ground Chorizo, Bacon, Red Onion and mix well
  4. Add mixture to frying pan and brown the meat until golden
  5. Turn to low heat, and add Smoked Gouda, mix in and let soften
  6. Remove from heat so it does not overcook the chorizo or cheese
  7. In a salad bowl add Romaine Lettuce, top with Chorizo-Gouda mixture
  8. Slice Lime in half, and squeeze overtop the salad, and serve (add Sour Cream and Cheddar to each individual salad)
